DINNER

We are now offering dinner on selected Thursdays, Fridays and Saturday evenings. Dinner is always served promptly at 5:30 pm in the dining room or on the Veranda if weather permits.

All dinners are served with a salad of mixed Organic Greens with a choice of dressing, Chef’s Choice Vegetable, Grilled Whole Grain Flat Bread, Chef’s Choice Dessert and a selection of Non Alcoholic Beverages. Wine by the glass or bottle is available. (see our Wine List for our current selection and prices)  All dinners are $40 per person plus tax and 18% gratuity

Cascadian Steak – A 9oz Boneless Loin Steak that is Dry Cured with our own rub for 24 hrs then grilled to perfection, accompanied by a reduction of Demi Glace`, White Wine and Porcini Mushrooms with Wild Huckleberries that our Chef, Brent and his son Luke handpicked in the Cascade Mountains on the Pacific Crest Trail. Served with Country Mashed Potato

Illahee Beef Wellington – Tender Medallions of Beef Loin that are seasoned with Fresh Herbs and spices, placed on a bed of fresh Greens and Potato’s then wrapped in Puff Pastry and baked. Sauced with a reduction of Red Wine and Demi Glace`

Grilled Wild Salmon – A Grilled Fillet of Wild North West Salmon That is first Marinated with Honey, Herbs and Spices. Accompanied by Wild Rice Pilaf

Sea Scallops and Prawns – Pan Seared Large Shrimp and Scallops that are marinated in Olive Oil, Lime and Fresh Mint then Wrapped in Smoked Proscuitto. Accompanied by Linguini with Saffron Buerre Blanc and Chef’s Choice Vegetable

Citrus Duck Breast with Risotto – A pan Roasted Duck Breast that is glazed with a Reduction of Fresh Squeezed Grapefruit and Brown Duck Stock, Served with a Risotto of Herbed Barley and Yam
